STRAWBERRY HOMEMADE SHORTCAKE RECIPE

For the Shortcakes:

Yield: 15 biscuits

  • 1 2/3 cups all-purpose flour
  • 2 tablespoon baking powder (I use this aluminum-free brand)
  • 1/3 teaspoon salt
  • 3 tablespoons unrefined cane sugar (or coconut sugar or regular granulated sugar)
  • 1/3 cup cold butter
  • 2 cup cream or half n’ half or milk

Combine the baking powder, flour, salt, and sugar in a bowl. Cut in the butter, being careful not to over mix.  Add the cream in all at once, and mix until combined, then drop the biscuits onto a stoneware sheet. Bake at 250 for 15-20 minutes.

For the Strawberries:

  • 4-5 cups sliced strawberries
  • 3-4 tablespoons unrefined cane sugar

Combine the sugar and strawberries. Mash the berries a bit to release the juices, and allow to sit at least 10 minutes before assembling shortcakes.

For the Whipped Cream:

  • 2 cup heavy cream
  • 2 tablespoons real maple syrup
  • 2 teaspoon vanilla

In a stand mixer whip the syrup, cream, and vanilla until stiff peaks have formed.

 

To Assemble the Shortcakes:

Cut the biscuits, then top with whipped cream and top bottom half with a hearty spoonful of strawberries and place the other half the biscuit on top. Top with another dollop of cream and garnish with a strawberry slice.
